7 LOGO Background--Location and Resources  Zhejiang Province adjoins the sea in the east. The famed Zhoushan Fishery is located here with abundant sea products; while the mid- province basin abounds with vegetables and rice. 9 LOGO History Background  Hangzhou, once the capital of the Southern Song Dynasty (1127 - 1279), it is customary to endow cuisine with dainty place-names. The cooking history of Zhejiang traces back to the Historical States of Wu and Yue (currently Jiangsu and Zhejiang Province). The oldest Zhejiang cuisine dish must be the famous Shaoxing dish “Yue chicken with clear soup”.

11 LOGO Consist  Hangzhou food tastes fresh and crisp, varying with the change of season.  Ningbo food is a bit salty but delicious.  Shaoxing food offers fresh aquatic( 水产的 ) food and poultry( 家禽 ) that has a special rural flavor.  Each of the three sub-cuisine traditions is noted for its special flavor and taste, but they are all characterized by the careful selection of ingredients, emphasizing minute preparation, as well as unique, fresh and tender tastes.

Special care is taken in the cooking process to make the food fresh, crispy and tender. Thanks to exquisite preparation, the dishes are not only delicious in taste and but also extremely elegant in appearance.

17 LOGO Representative menu items  West Lake Vinegar Fish  It is said that there was once a boy who made his living by fishing. When he fell ill, his sister-in-law fished for him and braised the fish she caught with a marinade of vinegar and sugar. He was said to have made an immediate recovery after eating it. The boy's story aroused the attention of the emperor and the recipe has been used ever since.

18 LOGO Representative menu items  Beggar's chicken Legend has it that "Beggar's chicken" was invented by a Hangzhou thief. The story goes that because the hungry thief had no stove, so he wrapped the stolen bird in clay and baked it in a hole in the ground. By this way, the aroma and flavor of the bird were well kept.

22 LOGO ♦此楼业主是一位清朝的落第文人,名叫洪瑞堂。 ♦菜馆的命名有两种说法。一种说法是店主从南宋 诗人林升《题临安邸》 “ 山外青山楼外楼,西湖歌 舞几时休;暖风熏得游人醉,直把杭州作汴州 " 诗 中得到启发而取为 " 楼外楼 " 。 ♦另一种说法是因菜馆建在近代著名学者俞曲园 (俞樾)先生俞楼前侧,洪瑞堂就到俞楼请先生 命名,曲园先生说: " 既然你的菜馆在我俞楼外 侧那就借用南宋林升 ' 山外青山楼外楼 ' 的名句, 叫做 ' 楼外楼 ' 吧! "
