1 大豆乳酸飲料對成人血脂的影響 本研究在探討大豆乳酸飲料對健康成人血脂?是否具有影響之效應。其中以抽血之血脂值任ㄧ部分偏高者當作初步篩選合乎實驗的受試對象: 總膽固醇(TC)> 200 mg/dL或三酸甘油酯(TG)> 150 mg/dL或高密度脂蛋白(HDL-C)< 40 mg/dL或低密度脂蛋白(LDL-C)> 130 mg/dL,共有15位,年齡20-55歲,性別不拘,進行為期六週的人體實驗,實驗採自體比較的方式。實驗前兩週為調整期,須避免服用乳酸飲料;接著六週為實驗期,每天飲用大豆乳酸飲料500 mL(分兩次,每次250 mL);最後兩週為排空期,避免食用乳酸性飲料。在實驗期第零週和第六週,採取空腹八小時之血液做血脂?分析。並要求受試者於實驗期間保持穩定之作息。結果發現,血中總膽固醇(TC)、三酸甘油酯(TG)、高密度脂蛋白膽固醇(HDL-C)、低密度脂蛋白膽固醇(LDL-C)濃度、TC/HDL-C和LDL-C/HDL-C之比值,實驗前後無差異。而以TG濃度為150 mg/dL分組後,濃度小於150 mg/dL之受試者,實驗前後有顯著增加(p<0.05)。若以性別來區分男女,在女性受試者方面,實驗前後有顯著增加(p<0.05)。男性受試者方面實驗前後無任何差異,但仍有上升趨勢。結果顯示,在本實驗中攝取大豆乳酸飲料降血脂作用並不明顯,因此若是要以大豆乳酸飲料當作每天營養補充品仍值得商榷。

2 The Effects of Fermented Soymilk on Blood Lipids in Adults
The objective of this study was to investigate the effects of fermented soymilk on blood lipids in adults. The subjects were fifteen healthy adults, aged (no sex difference), whose baseline plasma concentration of total cholesterol(TC) was either higher than 200 mg/dL or triglyceride(TG) was higher than 150 mg/dL or high density lipoprotein cholesterol(HDL-C) was lower than 40 mg/dL or low density lipoprotein cholesterol(LDL-C) was higher than 100 mg/dL. During the 6-week study period, all subjects were provided with 500 mL of fermented soymilk daily (divided 2 times, each 250 mL/bottle). Fasting blood samples were collected during the 0th week and the 6th week for blood lipids analysis. All subjects maintained their usual life during the study. After the 6-week of fermented milk consumption, the results showed no significant difference in total cholesterol、triglyceride、HDL-C and LDL-C concentration;the ratio of TC/HDL-C、LDL-C/HDL-C have the same results as blood lipids. The concentration of TG in those group whose lower than 150 mg/dL was significantly increased (P<0.05). The concentration of TG in those group of women was significantly increased (P<0.05). These findings indicated that fermented soymilk consumption did not improve the concentration of blood lipids in healthy adults.
